Broccoli Cheddar Soup

Per 300g Serving 161 cals

Protein 9.3g/ Fat 5.2g/ Carb 20.7g


430g Potato

100g Carrot

200g Celery

400g Broccoli

900ml Chicken Stock

500ml 2% Milk (use whatever milk you choose)

150g Onion

20g Garlic

10g Garlic Powder

1 Bay Leaf

Pink Salt

100g Cheddar Cheese

100g 0% Plain Greek Yogurt


Instructions:

Add all ingredients to pot or pressure cooker except for cheddar and plain greek yogurt.


Simmer till all is cooked and softened or pressure cook for 8-10 min.


Once cooked I used my hand blender for a few pulses to smooth out the texture. Stir in cheese and greek yogurt.


Top however you like add on protein of choice to make it balanced meal.
